Cucumber with Squash and Chicken Puree


The most silly faces my little Elle gave me came when I fed her cucumbers. I love her reactions to new foods and cucumbers were incredibly comical! Lets just say she did not like them. Squash, she loved. And she started eating chicken like it was going out of style. So, one day I added all these ingredients together and came up with this recipe, helping her enjoy the benefits of cucumbers with the flavors she knew and loved.

Cucumbers are mostly water, so I didn’t feel too bad when she didn’t want to eat them. Luckily, now she is 19 months old and loves to nibble on them as a snack. They do have a great supply of antioxidants and sometimes help reduce stomach disorders, though they don’t necessarily add a huge amount of value to your baby’s diet. Still, they’re a great treat and the more fruits and veggies your little ones get to know in young age, the more likely they are to continue enjoying them into adulthood. Cucumbers don’t pose an allergy risk, so feeding this to your baby after 6 months of age is perfect. Always consult with your doctor before feeding new foods to your baby.

Be on the look out when feeding new foods to your baby for the first time. The rule of thumb is to feed a new food three times before introducing the next new food. They also may cause gas. So if it makes your little one too gassy, hold off for a while.

Cucumber with Squash and Chicken Puree

Ingredients

  • 1/2 cucumber, diced
  • 1/2 squash, diced
  • 1/2 chicken, cooked and diced

Directions

  1. Wash and peel the cucumber, if preferred, and slice.
  2. Wash the squash and cut into cubes or rounds. Try to keep them all the same size so everything steams evenly.
  3. If not already cooked, cook chicken in a sauté pan in olive oil with salt and pepper.
  4. Cook each side for 5-6 minutes, or until done. Let cool.
  5. In the  Baby Bullet Steamer , steam the squash and cucumber on setting 5 until tender.
  6. Add the steamed squash, cucumber, and cooked chicken to your  Baby Bullet  blender and blend until smooth.
  7. If it’s too thick, add 1 Tbsp of water at a time until you reach your preferred consistency.
