I will come out and be honest with you. I am not a fan of beets. My great grandmother and father loved to eat them. Even my husband enjoys them in a salad. I personally think they taste too earthy. Actually, let me take that back, they taste like what soil smells like when you’re gardening. However, I will admit that when you roast a beet in coconut oil, it does cut back on the earthy taste. And when someone served me a hummus that had beets mixed in, I found myself enjoying it way more than I expected.
There are a lot of health benefits that eating beets can have on your body. They’re low in calories , with no cholesterol and I’ve read that beets can stimulate liver function and boost your immune system. So, I guess that’s enough reason to force myself to eat beets a few times a year.
I experimented with several different fruits for this recipe and, along with my husband’s opinion and tastebuds, found that the banana and beets pureed together made for a simple yet effective baby puree.
